
Established in Edo period, we have made sake for over 200 years in Furudono-machi, a small town endowed with nature in the Abukuma plateau.
Our products have been consumed mainly by the locals in Ishikawa-gun and the former Higashi Shirakawa-gun.
Our sake lineup has two main products: “Azuma Toyokuni” and “Ibuki”. The former preserves the traditional and classical taste while the latter—added to the lineup in 2011 by Kensei Yanai, the ninth master of the brewery—embodies our motto, “tradition and class meet the taste of our time”.
We feel strongly about brewing sake from locally harvested rice and locally drawn underflow water from the Abukuma plateau. There may be ingredients better suited for sake genus out there if you search across the country, but we believe that the finest local sake (Jizake) can only come from the local ingredients.
We also set ourselves apart from streamlining and mass production and take great pride in brewing with our hands. We adjust the brewing processing to all the subtle-yet-fatal fluctuations of temperature, humidity and conditions of rice to make the most of our beloved nature for our own Jizake.
Our sake is made from blessings of nature and our passion. Jizake, however, becomes Jizake only when they reach the local people’s daily life and their joy and sorrow.
Our products have been regarded as Jizake here because we have always placed great importance on making the most out of the nature, making with our hands, and keeping close to the life of the locals.
“Ibuki”—a sake the current young brewery master brought about—has been brewed since 2011. He is aiming to brew sake agreeable to all, keeping in mind “no rush, no haste, with composure, and one step at a time”.
